We could easily have filled a couple of sessions with fine Australian styles, but for this first deep dive, we’ve confined the line-up to the classics. For those who still think of Australia as making wines that are all brawn and no brain, be prepared to change your opinions – the current crop offers the depth of flavours that first attracted us to Aussie wines without the excesses that some producers fell into in the mid-1990s. You can expect South Australian Riesling, spicy reds from both warmer and cooler regions, Pinot Noir from either Yarra or Mornington, Hunter Semillon, Cabernets from Coonawarra and Margaret River, and Chardonnay from (probably) Margaret River.
